- Keep them airtight!
- Always reseal tightly or transfer to an airtight container.
- Avoid letting them sit open during long cooks.
- Store in a cool, dry, dark place
- Spices hate heat, humidity, and light — a pantry or closed cabinet away from the stove or grill is ideal.
- Avoid leaving them outside on the BBQ cart between uses.
- Extend life by storing in freezer or refrigerator.
- Use clean, dry utensils.
- Never scoop rub with wet or greasy fingers — that can introduce moisture and spoil the rub.
- Avoid temperature swings.
- Big temperature changes (like going from a hot BBQ table to a cold basement) can create condensation in the spice jar, leading to clumps or mold.
- Consider vacuum sealing for bulk storage.
- If you buy in large quantities, portion, and vacuum seal smaller packs to preserve freshness.
👉 Bottom line: The date is about peak flavor, not whether you’ll get sick. Store rubs properly and you’ll get long life out of them — even if they’re technically “expired.” If they smell off, are moldy, or taste flat, then it’s time to toss.
