
🥓 Ingredients:
- 3 lbs pork belly (skin removed, cut into 1.5” cubes)
- 3 tbsp Three Little Pigs Spicy Honey Maple Rub (or Touch of Cherry for a sweeter profile)
- 1 cup brown sugar
- ½ cup honey
- ½ cup butter (cubed)
- ½ cup Three Little Pigs Competition BBQ Sauce or Touch of Cherry Sauce
- Optional: A dash of cayenne if you want extra kick
🔪 Instructions:
- Prep & Season:
- Cube pork belly into 1.5” squares.
- Generously coat with Three Little Pigs Spicy Honey Maple Rub and let sit for 30–60 minutes in the fridge to marinate.
- Smoke It Low & Slow:
- Preheat your smoker to 250°F.
- Place pork belly cubes directly on the grate or a wire rack. Smoke for 2 to 2.5 hours until edges start to crisp and the fat renders.
- Wrap & Candy-Coat:
- Transfer smoked bites into an aluminum pan.
- Add brown sugar, butter cubes, and drizzle honey over everything. Toss lightly to coat.
- Cover tightly with foil and return to the smoker for 1 hour.
- Glaze & Finish:
- Uncover the pan, drain excess fat if needed.
- Drizzle with Three Little Pigs Competition Sauce and toss to glaze.
- Return to smoker uncovered for 20–30 minutes to tack up the glaze.
