Build the Smoke Base<\/strong><\/p>\n\n\n\n<p>In a cast-iron Dutch oven or heavy pot, heat beef tallow.<br>Add onion and peppers and cook until soft.<br>Add garlic and cook 30 seconds.<\/p>\n\n\n\n<p>Stir in both <strong>Three Little Pigs rubs<\/strong>, chili powder, cumin, and smoked paprika.<br>Toast for 1 minute \u2014 this unlocks the spice oils.<\/p>\n\n\n\n<hr class=\"wp-block-separator has-alpha-channel-opacity\"\/>\n\n\n\n<p><strong>2. Add the BBQ Flavor<\/strong><\/p>\n\n\n\n<p>Add brisket or beef.
