Corn&nbsp;chowder&nbsp;is a great way to use up leftover&nbsp;smoked brisket!<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img decoding=\"async\" src=\"https:\/\/three-little-pigs-bbq.com\/dev\/wp-content\/uploads\/2020\/10\/CHowder-1024x768.jpg\" alt=\"\" class=\"wp-image-1447\"\/><\/figure>\n\n\n\n<p><strong>Ingredients:<\/strong><\/p>\n\n\n\n<ul class=\"wp-block-list\"><li>1-pound smoked beef Brisket, shredded or chopped<\/li><li>1 tablespoon olive oil<\/li><li>1 leek, halved, thinly sliced<\/li><li>1-1\/2 pounds Yukon Gold potatoes, diced into 1\/2 to 3\/4-inch cubes<\/li><li>5 cups reduced-sodium beef broth<\/li><li>2 cups frozen sweet corn kernels<\/li><li>1\/2 cup whipping cream<\/li><li>1 tablespoon of <a href=\"https:\/\/bbqspot.com\/shop\/championship-rubs\/three-little-pigs-championship-bbq-rub\/\">Thee Little Pig\u2019s Championship Rub<\/a><\/li><\/ul>\n\n\n\n<p><strong>Preparation:<\/strong><\/p>\n\n\n\n<ol class=\"wp-block-list\" type=\"1\"><li>Heat oil in 6-quart stock pot&nbsp;on medium-low heat until hot; add leek.&nbsp;Cook 4 to 6&nbsp;minutes, stirring occasionally until softened. Add potatoes and broth; bring to a boil. Reduce heat to medium-low; cover and simmer 20 minutes, or until potato is tender. Remove from heat.<\/li><li>Add 2 cups potato mixture to blender container. Pulse on and off until smooth. Roughly mash remaining potato mixture in stock pot for chunky consistency; combine with blended mixture in same pot. Add corn, cream, <a href=\"https:\/\/bbqspot.com\/shop\/championship-rubs\/three-little-pigs-championship-bbq-rub\/\">Championship rub<\/a>, chopped beef Brisket. Season with salt and pepper, as desired.
